Vegan Masala Chai Pancakes Recipe
Ingredients:
1 cup quinoa flour (you can make your own flour by placing 1/4 cup quinoa in a coffee grinder, which yields 1/3 cup flour)
1 cup unsweetened non-dairy milk
1 tbsp sunflower seed or almond butter
1 tsp baking powder
1/2 tsp cinnamon
2 tbsp monk fruit maple syrup or pure maple syrup
1 tsp ACV or lemon juice
1/2 tsp sea salt
Coconut oil, or ghee for cooking
DIRECTIONS:
In a large bowl stir together all ingredients except coconut oil - let sit for 5 min to thicken
Heat 1 tsp oil in a skillet over medium heat. Spoon 2 tbsp of batter into skillet and make into a pancake shape. Cook 2 min or until bottom is firm and bubbles appear
Flip and cook 1-2 min more.
Top for your dosha or tastes:
Vata - almond butter, fresh berries, monk fruit syrup, or pure maple
Pitta - banana, walnuts, monk fruit syrup pr pure maple
Kapha - pomegranate seeds and cacao nibs
